I made two different options from the same ingredients.You can make them as you like - as a patties, as a cutlets or ''meatballs''for a dinner and serve them with a salad, with rice on the side, potatoes or just to eat itself.
Btw, I really love the smell of fresh dill. It Reminds me of summer. So this recipe was a great idea to make for a cold, rainy days ..
You will need
For meatballs
✓3/4 cooked rice - i used basmanti white and wild rice
✓0.5 medium size cauliflower
✓1 small carrot
✓1 onion
✓1/4 cup of oat flakes
✓salt, pepper, herbs,
✓pinch of dill
✓2 spoons of potato flour
✓oil to fry
Dill Sauce:
✓bunch of dill
✓1 cup of water
✓1 cup of cup almond milk
✓2 tablespoons flour and 1/3 cup water to thicken the sauce
✓Salt, pepper,
to make cutlets or ''meatballs'':
Boil carrot, cauliflower and rice separately. Make sure one of the ingredients will be still warm when you will start to combine them to make it more sticky and easy to shape small balls. In a pan fry chopped onion. Mash cauliflower by fork in a bowl, add rice, salt and pepper,dill, stir very well to a smooth consistency. Can be mixed with a hand blender, I just stirred and mashed with a little fork. Cut finely cooked carrots, add onion, stir, add salt and pepper, add flour and oats, with your hands make small, walnut-sized meatballs or shape for cutlets, fry until golden brown on both sides.
to make sauce:
Pour water to the pot or pan, add the finely chopped dill. Add salt, pepper, pour almond milk, bring to boil. In a small cup, jar or shaker, mix cold water with flour, pour into the sauce, stir.Pour on the warm sauce meatballs, Sprinkle with dill on the top.
