You can get it here ( Europe ) Ingredients 1 cup of flour + more if necessary / plus extra for surface 0.5 tbspoon of baking powder 1/2 teaspoon salt Herbs : oregano, basil, your favorites 1/3 cup of water 2-3 spoons of non diary milk Bit of olive oil Combine all of the ingredients in a bowl, you can us a spoon and hands to knead until it is soft ball, if it is sticky, add bit more flour. Take out from the bowl and put dough to a floured surface. Divide in few small balls. Roll every small dough flat, than use stamp to cut hearts. Heat a frying pan and place every heart, leave about 1 to 2 mins until bit brown. Use just a bit of oil, some of them I was frying without oil. Ingredients : 3/4 cup of millet 5 mushrooms 1 carrot ( you can ad less or more as you like) 1 zucchini 1 onion few spoons of pumpkin seeds Dill & parsley herbs & salt 3 tbspoons potato flour 2 tablespoons of oats Oil for frying Few cranberries or plum Cook millet as is suggested on a pack ( about 20 mins ). Clean the mushrooms, carrot, zucchini. Cut and fry onion. Preheat oven to 180C. You can cook carrot, this time I used it raw. Throw all ingredients to food processor or stir it with spoon. I didn't wanted to get totally smooth consistency this time so I processed all ingredients until all was mixed but bit crumbly. After all add cranberries. Don't use too much unless you want to have sweet patte :) Get the baking form lay with baking paper. Spread patte very carefully and put into hot oven to 180 degrees, bake about 45-1h minutes. I had one evening that I was doing really, really nothing ( yes, we all deserve that! ) but for me doing nothing is mostly ... learning something from articles or browsing some things online. And when I was doing nothing I decided to make something. Something sweet! I wasn't inspired by anything special in this recipe but that was kind of the same ingredients we was using evening before. for Carrot Cake ( witch I will post soon). So I just mixed what I had left in my kitchen and here we go : Dough 12-15 pitted dates 4 teaspoons of cocoa 1/2 cup of oats 1/3 cup of walnuts 1 teaspoon coconut oil melted cinnamon nutmeg small pinch of salt filling 1/3 cup of cashew nuts 2-3 teaspoons of lemon juice 1/3 cup of shredded coconut 3 tablespoons of coconut milk from the can ( rich and creamy ) vanilla sugar ( optional ) or vanilla extract agave syrup to taste. In food processor mix all ingredients for dough. Mix about 3-4 minutes ( more if needed) hen ready take it out, put on a table or paper and shape with your fingertips or roller for 2 blocks, about up to 1 cm thick each. Leave in the fridge for 10-15 minutes. Than make your filling. Start from shredded coconut, process it for few minutes to make it more soft and than combine all the rest of ingredients for filling. When consistency is smooth and sweet enough, take out the dough and fill in your one block of dough, and cover with other block of dough .Leave in a fridge for about 20-40 minutes ( longer than better). I had a plan to make coconut bites a while ago and we decided to make it for a great evening, so I let Dorothy to make them as she really want to learn new, vegan things to make at home. She did really well!! There were delicious, is an amazing healthy treat for any occasion ! Here is the recipe! Ingredients: for Coconut bites 3/4 glass of Millet 1 and 1/2 glass ( and more, read below ) of Almond or Coconut milk ( I used Coconut ) 1/2 glass of Ground walnuts 4 spoons of ground almonds 2 small packs of vanilla sugar (ABOUT 8 teaspoons or more as much sweet you prefer ) pinch of turmeric 4 tablespoons of shredded coconut, plus more to coat bites Chocolate coat: 0.5 of a cup melted coconut oil 5-6 teaspoons vegan cocoa agave syrup - to taste as sweet you prefer. Cook millet in almond or coconut milk with vanilla sugar and turmeric- longer than better. My millet was advised on a pack to cook about 15-20 minutes but we was cooking it about 30-35 minutes, adding more milk all the time and stir, to make consistency soft, add more sugar if you prefer for your best taste. You need to make sure you let milk to evaporate all the time and add more ( I am so sorry this word is very new to me so I don't know is it right to use in recipes ) to cook long and got soft but sticky enough consistency. . In food processor combine walnuts, 4 spoons of shredded coconut and 4 ground almonds. Mix it all together with cooked millet. You can make it in a bowl stir with a spoon. Shape your bites. You can leave them in a fridge for few minutes. On a side in a small pan or bowls mix the coconut oil, ad cocoa and agave syrup. Let it cool of in a fridge for 10 minutes. You will need For meatballs ✓3/4 cooked rice - i used basmanti white and wild rice ✓0.5 medium size cauliflower ✓1 small carrot ✓1 onion ✓1/4 cup of oat flakes ✓salt, pepper, herbs, ✓pinch of dill ✓2 spoons of potato flour ✓oil to fry Dill Sauce: ✓bunch of dill ✓1 cup of water ✓1 cup of cup almond milk ✓2 tablespoons flour and 1/3 cup water to thicken the sauce ✓Salt, pepper, to make cutlets or ''meatballs'': Boil carrot, cauliflower and rice separately. Make sure one of the ingredients will be still warm when you will start to combine them to make it more sticky and easy to shape small balls. In a pan fry chopped onion. Mash cauliflower by fork in a bowl, add rice, salt and pepper,dill, stir very well to a smooth consistency. Can be mixed with a hand blender, I just stirred and mashed with a little fork.
