Really quick and easy lunch idea. ✓1 can of chickpeas ✓1/3 cup pasta ( or more as you prefer) ✓1 tbsp Curry Powder ✓1 teaspoon Garlic Powder ✓pinch of Salt & Pepper On the Side : ✓Hummus ✓Raw Carrot ✓Raw Celery Cook your pasta as advised on the pack and set aside. Follow the instructions from the can of your chickpeas. Mine was ready after 6-8 minutes after cooking in pan ( do not bring to boil ). Add curry, garlic, salt and paper. Mix with pasta. Serve warm or cold. Enjoy. |

Today I decided to dedicate my post to you. Is awful and dark day in Dublin, all day is raining and I feel sleepy. My apartment s facing to the park, Herbert Park is usually full of people especially during the lunch, people coming here to feed swans and ducks, spend time with families, kids, every few weeks is a food festival here. But today nobody is around. All I can hear is the sound of raindrops trickling down on my window... I was making my pizza earlier on ( recipe will post later ;)) and was thinking that I am so excited that I have started my blog lately, and there is so high traffic already on my website ( thank you !). And then I realized that I am very curious about people who visiting my page. Sometimes you can see me posting questions like: where are you now and what is the weather there. I am very curious. So I am sitting now on the couch, having my laptop on my knees, pink scarf wrapped on my neck to warm me up and I am thinking : I need to talk to them! My blog is new, I am still working on it, but still - I am getting many of you coming back to my site and facebook page. Let me ask you few questions, please! So this kind of dinner ( or lunch ) is happening when I have not much in my kitchen but still want to eat something nice, creative and tasty. And take photos of it of course. This is 4 ingredients only zucchini, but you can add what you like.
Ingredients : 1-1,5 cup of shredded coconut 0,5 teaspoon of Vanilla extract 3-4 spoons of Coconut milk from the can 3/4 a cup Melted Coconut oil Few spoons of agave syrup to taste 3 spoons Dried Cranberries Shredded coconut put into food processor and process it for about 5-10 minutes to make it more soft. Then add vanilla, milk, coconut oil and agave and process it for few seconds more to combine all ingredients. The consistency should be sticky enough to be able to shape balls. Add more milk if needed and agave syrup as sweet you like. After all add cranberries. You can just mix it with a spoon to get effect from picture on the left, or process bit more to make smaller pieces of cranberries pic on the right. leave in freezer for 30 mins - 1 hour. Enjoy :)
